Blackberry Raisin Sauce

Ingredients

1/2 cup raisins 1 cup blackberry jelly 1 cup water 3 Tbs. lemon juice

Directions

In sauce pan, simmer raisins in 1 cup water until they are plumped. Drain and stir in blackberry jelly and lemon juice. Heat sauce slowly, stirring constantly, until jelly melts and sauce is well blended


Cucumber Dressing

Ingredients

1 cup sour cream 1/4 tsp. salt 1/2 cup chopped, peeled and grated onion seeded cucumber dash of freshly ground pepper 1 Tbs. prepared horseradish

Directions

Mix together and chill.


Israeli Fish Balls

Ingredients

1 pound fish fillets 2 eggs bread crumbs salt and pepper 1 onion parsley 1 clove garlic 1/2 cup tahini matzo meal 1 can tomato sauce

Directions

Grind the fish and the onion. Add bread crumbs, garlic, eggs, salt and pepper, and parsley. Shape in tiny balls. Roll in matzo meal and fry a little on both sides. Add tahini to a can of tomato sauce. Mix together on top of range. When sauce is hot, add fish balls. Shake in pan so sauce will cover all the balls. Let come to a boil. Serve in a chafing dish.


Mock Chopped Liver

Ingredients

1 lb. sliced mushrooms
1 medium onion, finely chopped
1/4 cup canola oil
3 slices pumpernickel bread, torn in pieces
1 tsp. salt
1/4 cup chopped walnuts
1 large Tbsp. mayonnaise
1/2 tsp pepper

Directions

Pour oil into 10 inch pan.
Saute onions and liced mushrooms until mushrooms are soft and dark. Turn and stir frequently for about 10 minutes.
Put onions, mushrooms, torn pumpernickel, salt, pepper, mayonnaise, and walnuts in food processor. Pulse until correct consistency (not too fine).
Refrigerate before serving.



Rolled Cabbage

Ingredients

1 large head cabbage 1 can tomato soup with 1 can water boiling water 2 pounds ground beef 1/2 cup brown sugar 1 slice white bread 3 Tbs. raw rice juice of half a lemon salt and pepper 1/4 cup sugar grated small onion

Directions

Core cabbage and place in boiling water to ease removal of leaves. Mix together the meat, bread, rice, salt and pepper and onion. Add enough water so that mixture is loose. Roll, meat in cabbage leaves. Mix the tomato soup with the can of water. Add brown sugar, white sugar, sour salt or lemon juice. Cook cabbage rolls on top of stove in tomato mixture for 1/2 hour in pressure cooker. Transfer to shallow baking dish and bake covered in slow oven for 2 hours. Leave cover off last 1/2 hour to brown.


Tuna Mold

Ingredients

1 package lemon jello 2 Tbs. onion, finely chopped 1/2 cup hot water 2 Tbs. lemon juice 2 pimentos, finely chopped 1/2 tsp. salt 2 Tbs. relish 1/2 cup cold water 1/2 cup cottage cheese, 1 can tuna fish 1/4 cup celery, finely chopped 1 Tbs. mayonnaise 1/2 cup sour cream

Directions

Dissolve jello in hot water. Add lemon juice, salt, and cold water and set aside. Mix together the tuna fish, celery, onion, pimento, relish, cottage cheese, mayonnaise, and sour cream. Blend into slightly thickened gelatin. Place into oiled 1 quart mold and refrigerate.
